The story

For much of British brewing history, breweries sold their bitters at several strengths, and the strongest was often called “special.” The phrase “Extra Special Bitter” belongs above all to Fuller’s of Chiswick, London, which launched Fuller’s ESB in 1971 as a winter beer. It proved so popular that it became a permanent fixture and won multiple Champion Beer of Britain awards.

Fuller’s ESB was so influential that American brewers adopted “ESB” as a style name for any stronger, malt-forward English-style bitter. In Britain, the style is more commonly described as “strong bitter,” partly because ESB is closely tied to the Fuller’s brand.

What it tastes like

An ESB is richer and fuller than an everyday bitter. Malt brings toffee, caramel, toasted bread and nutty notes, balanced by assertive English hops that add earthy, spicy or orange-peel character. Fruity esters from English yeast — marmalade, plum or raisin — are part of the charm. The bitterness is firm but the malt keeps things rounded, and the finish can lean either dry and hoppy or softly sweet depending on the brewery. Color ranges from deep gold to copper-brown.

How it’s made

Brewers use British pale malt such as Maris Otter, with crystal malts for color and toffee flavor, and sometimes a pinch of darker malt. Some recipes include sugar for additional gravity. English hops like Challenger, Northdown, Target and East Kent Goldings supply bitterness and aroma. A characterful English ale yeast is essential to create the signature fruitiness. Traditional versions are cask-conditioned, while bottled and export versions are carbonated a little higher.

Fun fact

The Bass red triangle, used on bottles of Bass Ale, became the first trademark registered under the UK’s Trade Marks Registration Act of 1875. According to company legend, an employee queued overnight outside the registry office to make sure Bass got the first application in.
